Prepared according to the principles of Ayurveda, this delightful kozunak recipe will fill your home with the sweet aroma of celebration and create a joyful mood to share with your loved ones. With a delicious vegan kozunak, all your senses will celebrate a truly magical Easter!
Ingredients:
1 kg whole grain flour
300 ml coconut (or other plant-based) milk
150 g coconut oil
250 g unrefined sugar
40 g fresh yeast
1 stick of Bourbon vanilla
1/4 tsp Himalayan salt
Raisins to taste
Almonds to taste
Candied orange peel to taste
Preparation:
In a small bowl, prepare the starter by dissolving the yeast in lukewarm water, adding 100 g of the flour and a pinch of sugar. Let it rise in a warm place.
In a large bowl, mix the remaining flour with the vanilla, sugar, and Himalayan salt. Make a well in the center and pour in the starter. Begin to knead lightly, gradually adding the coconut milk and oil until you get a smooth dough. Knead until the dough warms up, forms air bubbles, and becomes elastic. Cover it with a damp cloth and let it rise in a warm place.
Once the dough has risen, knead it again and divide it into three equal parts. Roll each piece flat and fill with peeled almonds, candied orange peel, and raisins. Shape as desired.
Once all parts are ready, braid the dough into a kozunak and place it in an oiled baking tin. Decorate as you wish and leave it to rise a third time for extra fluffiness and lightness.
Bake at 180°C (350°F) for 45 minutes.
