Raw cake is easy to make and incredibly delicious! The Art of Living brings you this quick and simple raw dessert recipe.
Prep time: 5 to 10 minutes
For the base:
6–8 QUIN BITE Choco Mint raw bars
For the cream:
250 g raw cashews (pre-soaked)
Juice and zest of 3 limes
30 g maple syrup (double the amount if you prefer it sweeter – you can substitute with raw agave syrup, honey, or unrefined brown sugar)
1 tsp spirulina (to give the cream a fresh light-green color)
60 ml coconut oil
For the topping:
1 lime
1 tsp spirulina
Chocolate chunks (or finely chopped dark chocolate)
How to prepare it:
For the base:
Unwrap the QUIN BITE bars and mash them into a dough-like ball. Roll it out gently into your desired shape – heart, circle, or anything you like. Place in the fridge while you prepare the cream :)
For the cream:
In a blender, mix the soaked and drained cashews with the coconut oil, maple syrup, lime juice and zest, and the spirulina. Blend until smooth and fluffy. If you like it sweeter, feel free to add more maple syrup.
Spread the cream over the prepared base. Chill in the fridge until serving time, then decorate!
Slice the lime into rounds for decoration, sprinkle with a bit of spirulina for color, and scatter chocolate chunks for extra flavor. It’s that easy!
