Vegan Christmas Cookies with Chocolate Chips

Sana Alsbay-Dragova from The Art of Living shows us just how quick and easy it is to prepare delicious and healthy vegan Christmas cookies with chocolate chips – absolutely irresistible for the festive season! Try it yourself! :) IT’S THAT EASY!

 

♡ Ingredients:

♥ 2½ to 3 cups flour
♥ 1 tsp baking powder
♥ ½ tsp salt
♥ ¾ cup brown (unrefined) sugar
♥ ½ to 1 tsp Ceylon cinnamon
♥ ½ to 1 tsp Bourbon vanilla
♥ ½ cup rice coconut milk (or another plant-based milk like soy, almond, or even filtered water)
♥ ½ cup coconut oil (may need to be gently melted to liquify)
♥ 1 to 1½ bars of dark vegan chocolate, chopped

 

♡ Preparation:

In a large bowl, combine the dry ingredients – flour, baking powder, sugar, cinnamon, and vanilla – and mix until the color is even and all ingredients are well distributed.

Add the wet ingredients – the plant milk and coconut oil – and mix until you get a uniform dough (add a bit more flour if needed). Finally, stir in the finely chopped vegan chocolate.

Roll out the dough and cut it into your favorite festive shapes.

Bake in a preheated oven at 180°C (350°F) for no more than 15 minutes. Remove the cookies while they’re still soft – they will firm up as they cool. On Christmas Eve, leave a plate of cookies out for Santa and hope he loves them! ;)
