This healthy, colorful, and delicious chaat (snack) recipe is bursting with flavor and showcases sweet potatoes as the star ingredient. The pomegranate seeds add a sweet and sour taste and make the dish bright and colorful. It is a healthier twist to the traditional Aloo Chaat and uses sweet potatoes instead of regular white potatoes. In this version of the recipe, I also roast the sweet potatoes instead of the traditional deep fry.
Sweet potatoes are not only rich in fiber, vitamins, and minerals but also vata pacifying, making this dish the perfect fall treat. The pomegranate seeds used here add a colorful splash to the dish. They are tridoshic, pacifying all the three doshas (energy in the body). They are also high in vitamin C, potassium, and a good source of fiber.
The recipe calls for roasting the sweet potatoes in the oven. In order to get the crispy texture, you need to make sure to spread the sweet potato pieces evenly in a single layer on the oven tray. This will ensure the potatoes don’t get soggy. Also broiling them for the last 5 mins makes them extra crisp and crunchy. The chaat masala used here is a great digestive spice and balances all the six tastes. It is made by mixing coriander, cumin, mango, dry ginger, and black pepper powders with black salt, asafoetida, and caraway. You can purchase it from your local Indian grocery store, or online.

Roasted Sweet Potato Chaat
(Servings ~4 servings)
Ingredients (all organic):
4 medium sweet potatoes, cut into 1-inch cubes
2 tbsp olive oil
1 ½ tsp Chaat masala powder
Extra Himalayan pink salt (optional)
For garnish:
¼ cup roasted peanuts
1 pomegranate, seeded
1/3 cup cilantro leaves, finely chopped
1 lime, juiced
Method:
Preheat the oven to 375 degrees F. Drizzle the sweet potatoes with olive oil. Mix in the chaat masala and more salt if needed to taste. Place in a single layer on a roasting tray and roast in the oven for 20-25 mins. You can broil for the last five mins for an extra crispy and crunchy texture. Garnish with lime juice, pomegranate seeds, peanuts, and cilantro. Enjoy hot!
