Spring has sprung! Celebrate the season with these colorful and delicious Nasturtium Spring Rolls made with Vietnamese rice paper!
Celebrate the arrival of the Spring season with these delicious Vietnamese rice paper spring rolls made with edible spring flowers. These colorful spring rolls are light, refreshing and make the perfect Instagram-worthy appetizer.
You can grow your own Nasturtiums or else buy any edible spring flower mix from your neighborhood natural food store. The transparent Vietnamese rice paper used here makes the perfect backdrop to display the colorful nasturtium blossoms. The Nasturtium’s flower and leaves have a peppery taste to them which is balanced well with the sweet and nutty almond sauce.
Celebrate the onset of Spring with these light and refreshing rolls!
Nasturtium spring rolls with almond sauce
(4 servings, 4 spring rolls, and ½ cup almond sauce)
Ingredients
For the spring rolls:
4 sheets of Vietnamese rice paper
½ cup nasturtium leaves
½ cup baby spinach leaves
3-4 nasturtium flowers, separate the petals
1 carrot, grated
1 avocado, cut into 8 wedges
For the almond sauce:
⅓ cup chunky almond butter
1 tbsp Braggs liquid aminos
1 tsp grated ginger
1 tbsp lemon juice
⅓ cup hot water
Method:
Add all the almond sauce ingredients in a mixing bowl and stir well till sauce-like consistency. Keep aside. Dip a single Vietnamese rice paper sheet into warm water for a few seconds until pliable and transfer to a wooden cutting board. Arrange 5-6 nasturtium petals(colorful sides down) in the center. Next place the nasturtium and spinach leaves on it, followed by grated carrots and two avocado slices. Fold in the sides and fold the bottom edge of the rice paper over the filling. Roll it up tightly and place on a serving plate seam side down. Finish making the rest of the rolls and serve with the almond dipping sauce.
