Think shortbread and your first thought is butter—and loads of it! This recipe is my version of the traditional shortbread cookie and calls for replacing the butter with coconut oil. It provides this vegan shortbread with a satisfying crumbly melt in your mouth texture of traditional shortbread, and you will not miss the butter! One more tip for the perfect shortbread texture is to not skip the extra step called for in the recipe and chill the dough for a couple of hours before baking.
