Quinoa Cakes - Delicious
Vegan Crab Cakes

These cakes can be served like old-fashioned crab cakes or like an all-American burger.

They’re also really healthy,  gluten-free and high in fiber.

Quinoa is almost like a miracle food with its many health benefits. Some of them are:

  • Rich in fiber
  • High energy content
  • Very high in protein
  • Contains iron and magnesium
  • Low glycemic index, which is beneficial in controlling blood sugar
     

Ingredients:

  • 1 cup of cooked quinoa (½ cup raw quinoa, simmered in 1 cup water for 25 minutes)
  • 2 celery sticks
  • small ginger (finely chopped)
  • 1/2 cup of almonds, ground
  • 3 tsp of tahini
  • fresh dill
  • olive oil
  • salt/pepper

Preparation:

  1. Preheat oven to 350 degrees
  2. Chop celery
  3. Finely chop the ginger
     

Directions:

Mix the cooked quinoa with ground almonds, finely chopped celery, ginger, olive oil, tahini, salt and pepper. Then add some fresh dill. Make medium size balls out of the mixture. Place them on an oiled baking tray.

Put them in the preheated oven and bake them for about 30 min, till golden.

If you like your cakes super crunchy you could flip them over. Serve with fresh green salad and dipping sauce.

Tips:

While boiling the quinoa make sure to open the lid and fluff the quinoa from time to time.
