Vegan Stuffed Cucumber
Boat Recipe

Cucumber is one of the most versatile vegetables out there. It is a rich source of fiber, Vitamins A & C, folic acid, and magnesium. Try this super easy raw cucumber boat recipe for healthy snacking.


  • 1 medium size cucumber - makes 2 boats
  • Half a cup of almonds - soaked overnight
  • Juice of 1 lime
  • 1 small piece of organic ginger
  • 1 fresh bunch of organic cilantro chopped finely
  • 1 tbsp of celtic sea salt
  • Half a cup of sprouted mung beans
  • Half a cup of water
  • 1 Tbsp of nutritional yeast


  • Wash and peel the cucumber, then cut it in half
  • Grind the almonds to a pulp
  • Mix almonds with cucumber seeds, lime juice, nutritional yeast, ginger and salt in the food processor
  • Fill up the cucumber boats with the mixture and garnish with the chopped cilantro and sprouted mung beans
